Description
Endive, or escarole, is a type of chicory. Its crunchy texture and sweet yet mildly bitter flavor combination makes it a delightful addition to salads. It won an All America Selections award in 1934.
For sweetest flavor, time your planting so plants mature in cool weather. Sow in moist, rich soil in early spring and again in fall/winter in mild climates. For more tender leaves, tie the outer leaves to cover the inner leaves to blanch them while growing.
