Description
Striking 7′ tall plants add a burst of color to the vegetable garden with shades of deep burgundy, red, pink, orange, and yellow. Tender young leaves are edible and can be used like spinach. Or let ornamental seed heads dry on the plant and harvest for seed.
Plant in early spring once soil has warmed to 65-75 degrees F. Select a location in full sun with fertile, well-drained soil. Plants can be spaced closer together if grown for greens and further apart if grown for seed. Keep soil evenly moist until flowering, then allow soil to dry slightly to ripen seed. Harvest leaves when they are young and succulent. Allow seed heads to dry on the plant and harvest before seeds begin to drop. Separate seed from chaff by placing seed heads in a bag and striking it against a hard surface. Rinse seeds thoroughly to remove any bitterness before cooking or storing.
