Description
Fennel has a clean refreshing flavor like anise or licorice with lovely feathery leaves and large seed heads. The entire plant is useful. Seeds are used to flavor meats, fruits and baked goods; leaves are used fresh as a garnish in salads; stems are used like celery in soups and salads.
Plant in spring after last frost date or fall/winter in mild climates. Prefers full sun. Transplanting is not recommended. Do not plant near dill, as both the fennel and dill will taste alike. Cut individual leaves and stems as needed for fresh use. Seed heads form in late summer. To harvest seeds, wait until they turn brown then cut entire seed head. Finish drying seed heads in cool, dry place.
